I would like to be able to remove 'cash' as the default payment option on invoice payment screen
I find that when staff here are processing payments for invoices, it would be better to have no payment type preselected, as it would force the sales assistant to manually select one.
It would remove (or at least reduce) errors where cash is selected instead of offline cc, etc.
The default on the page is simple the first Payment Method in the list. You can enter a space as the first option to default to a blank.

We still end up sometimes with the wrong option selected.

In Admin -> Payment Methods, whichever method you have first in the list will be the default method on the payment screen. You could set this to be blank, or "CHOOSE PAYMENT TYPE", or some other visual indicator to staff that they need to make a selection. The downside is that this option would count as a valid payment method, so if staff are really breezing through the screen you'll still end up with the wrong option selected.
